Chef Jason Esposito, Fresco's Waterfront Bistro opened in the fall of 2002, originally as a small 60-seat Italian bistro. Looking to grow & capitalize on the waterfront view, Fresco's hired Louisiana based Chef Jason Esposito who was quickly building a reputation in South Florida as a chef who helped to create what is now known as "Gulfcoast Cuisine." After college, Jason went to culinary school in Louisiana. His influences come from classic French and Italian blended with Creole & Cajun cuisine. Chef Jason has been cooking professionally for 15 years in Louisiana & South Florida, including time spent with the Boca Raton Resort & Club, St Andrews Country Club, and Nick's Miami Beach. Chef Jason relocated to the St Petersburg area in 2001. Jason's family founded the Tampa Bay Lightning, which brought most of his relatives to the region. He liked that St Petersburg is a "walking city," with everything close by. In fact, Chef Jason found Fresco's by chance, back when it was a small, struggling bistro. The substantially-expanded Fresco's Waterfront Bistro now boasts a 2,000 square-foot waterfront deck, making it a year-round favorite of locals and visitors.
